Maceration for 10-15 days in temperature-controlled steel fermenters. It rests in steel vats until January of the year following the harvest and then matures in French oak barriques (medium toasted) for 8 months. Before bottling it rests for about 6 months in steel tanks
Intense ruby red with violet hues and good vivacity
Intense, persistent, spicy, with scent of red fruits and vanilla
Harmonious with a pleasantly bitter aftertaste, slightly tannic, which with the passage of time refines to a pleasant balance
Piadina romagnola with cured meats, baked lasagne, tagliatelle with meat sauce, cappelletti in broth, pan-cooked chicken and rabbit with potatoes, cherry tomatoes and rosemary, sliced beef
