Maceration for 10-15 days in temperature-controlled steel fermenters. Afterwards the wine remains in steel vats until January of the year following the harvest. Maturation continues in second passage tonneaux (medium toasting) for 12 months in a temperature-controlled environment. It rests for 2 years in steel tanks and refines in the bottle for a further 6 months
Intense red, tending to garnet, due to ripening
Intense, delicately spiced, broad and rich, with characteristic notes of incense
Dry, harmonious, pleasantly tannic, with a bitter aftertaste that refines over time to a pleasant harmony
Roasted red meat, game and game, perfect as a 'meditation' wine
16°-18° C. Serve in large goblets
